Winter Warm Up

Good Morning Kids...
Well here in south Texas we are bracing for our second winter storm. I know, you kids up north are saying to yourself, that's nothing new for us, BUT here in the Houston area it is NOT normal. We get excited at just the thought of the possibility that we MIGHT get some snow. Or should I say snow flakes... Well anyway you look at it we need a simple yet great meal to keep us warn in side. So today we are going to be cooking two wonderful and wintery favorites. First we will cook a main meal baked in our convection oven and second will be our warm dessert cooked in our crockpot. JALAPENO CHICKEN & RICE CASSEROLE

Ingredients
2 cups cooked rice
2 cups (8 ounces) shredded Monterrey Jack cheese...
1 1/2 cups cooked, chopped chicken breast meat
1 can (12 fluid ounces) Reduced Fat Evaporated Milk
1/2 cup finely chopped red onion
2 large eggs, lightly beaten
1/4 cup finely chopped cilantro
2 tablespoons butter or margarine, melted
1 tablespoon diced jalapeƱos
Salt

PREHEAT oven to 350–F. Lightly grease 2-quart casserole.
COMBINE rice, cheese, chicken, evaporated milk, onion, eggs, cilantro, butter and jalapeƱos in prepared casserole; stir well.
BAKE 45 to 50 minutes or until knife inserted in center comes out clean. Season with salt.


Crockpot Apple Crisp
Ingredients
4-5 cups apples, sliced 
1 1/2 cups flour 
1 cup packed brown sugar 
1/2 cup regular sugar 
3 tsp. cinnamon 
1/2 tsp. ginger (optional) 
1/4 tsp. nutmeg (optional) 
3/4 cup butter

Directions
Grease crock pot or use a liner 
Line with apples coat apples in a little brown sugar before putting them in the crock.
Melt butter and combine with all remaining ingredients. Pour over apples. 
Cook on HIGH 3 hours or LOW 4-6 hours.
