Ed and I are camped out here in Columbus Tx for a few weeks. We recently joined Lake Conroe Chapter of Thousand Trails a local chapter of the FMCA (Family Motor Coach Assoc.) We are here for the March Rally. We decided to come early and leave late, so far it has rained 3 out of 6 days, oh well, we are still enjoying being out here with all the beautiful deer. Ed and I have camped at Stephen F Austin state park just up the road but I like this park just a little bit more. We did meet some new friends, Jan and Greg White and we found a great seafood restaurant, Sealand Seafood Restaurant with the BEST catfish I have ever eaten. So all is not lost... Our good friends Janice and Dave Evans came in on Friday, a couple of days early, for the up coming rally. We will be spending a lot of great quality time with all the wonderful people here during our stay.
Looks like its going to be another rainy day here at TT Colorado River. Can't get outside to fire up the grill, no problem. After breakfast I'm going to get out my crock and make something really yummy. I'm thinking Beef Tips, Mashed Potatoes and a side of Green Beans. That sounds perfect. Crockpot Beef Tips with Gravy
1 1/2 lb beef tips or cubed beef stew meat
1 package of dry onion soup mix
1 can of cream of mushroom soup
1 can of beef broth
Put the beef on bottom of Crockpot
In a bowl combine dry onion soup mix, cream of mushroom soup and beef broth

1 can of cream of mushroom soup
1 can of beef broth
Put the beef on bottom of Crockpot
In a bowl combine dry onion soup mix, cream of mushroom soup and beef broth
mixing well then pour over beef
Cook on low for at least 6 to 8 hrs OR high for 4 hrs

Give everything a good stir before serving serve on top of mashed potatoes or egg noodles.
