Mornin' Kids, Here's another wonderful Crockpot soup for our Fall line up. Make it while you sleep and this soup will be ready for lunch the next day. This high protein very flavorful soup will warm you from the inside out and keep you going all day long. Or slow cook it all day and it makes a great supper when served with a warn piece of garlic bread or a few saltine crackers. Yum...
Hearty Navy Bean and Bacon Soup
1 1/2 cup dried navy beans
2 cups cold water
6 slices bacon
1 med carrot, chopped
1 sm turnip, chopped
1 stalk celery, chopped
1 med onion, chopped
1 tsp Italian seasoning
1/8 tsp pepper
5 3/4 cups chicken broth
1 cup milk
Directions:
Soak beans overnight; drain
Cook bacon until crisp and drain on a papertowel
Combine all ingredients, EXCEPT milk, in Crockpot and cook on Low 8-9 hrs
Stir the milk in the last 15 minutes or so until it is heated through.
