What a beautiful day it is here in Conroe TX. It's Saturday March 30, 2013 the sun is shining bright with a slight breeze, a true Spring day for sure. Tomorrow is Easter, praise the Lord, and a lot of us will be headed outside for family picnics and egg hunts. My favorite picnic basket lunch is Glazed Ham, Potato Salad, Baked Beans and of course Deviled Eggs. I will be making all of these wonderful items tonight and refrigerate them so they will be ready to go in the morning. I know most of you will be dying eggs tonight, it is so much fun. Why not make something good with all those eggs your dying. At our house we dye eggs but the Easter Bunny doesn't hide the ones we dye, we also have the GREAT plastic eggs for hiding ONLY because we like to have SURPRISE filled eggs for the hunt, not to mention it's much CLEANER.
So let's get started... Today's recipe is going to be "Baby Chick Deviled Eggs" I love this recipe so much I just had to share with those of you who have not seen it before. It's also fun to let the kids help too, they love putting on the eyes and beaks.
Baby Chick Deviled Eggs
12 Eggs
2-3 Tablespoons Mayo (adjust for creaminess)
1 teaspoon Mustard
Salt and Pepper to taste
1 Tablespoon of SWEET Pickle Relish (optional)
a few pieces of Carrot for the beaks
a few Black Olive pieces for the eyes
Boil eggs for 10-15 min and Cool
Peel eggs then cut 1/3 off the tops of each egg and take out the yoke.
Cream together Yoke, Mayo, Mustard, Salt, Pepper and Relish(optional) and put in a baggie. Clip off a tiny end of the baggie to fill the eggs.
Fill each 2/3 bottom part of the egg with the mixture and arrange on a platter. Apply the Olive pieces for the Eyes and Carrot pieces for the beaks then top each Egg with the top 1/3 of the boiled egg. How CUTE and FUN is this?
