Gettin' Crocked Thursday

Good Morning Crockers
We're on the down side of the week now heading into Friday. Woo Hoo... Today's recipe is going to be another great one y'all. With summer on it's way you know we all love BBQ, so why not have it in the most simple of ways, Crock it. That way you can put it on the night before or that morning and it's ready when you are. Now you won't miss a minute of the family fun outdoors and have to worry about dinner or lunch. So lets get Crockin'. Happy Cooking!

Crockpot BBQ Pulled Pork

1 pork butt or shoulder
1 onion (sliced)
1 tbsp garlic powder

  salt and pepper (to taste)
bbq sauce (any of your faves will do)
1/2 teaspoon liquid smoke (optional: if you want that smoky taste)
1/2 cup vinegar

1. Put pork in crockpot; add onion, garlic powder, salt and pepper.
Cook on LOW heat until done. (About 8-9 hours)
2. Take out pork and pull apart. Drain all the juice out except 1 cup
3. Mix the bbq sauce, liquid smoke, vinegar and pork juice and pour over the pulled pork and stick back in the crockpot and cook for another hour on HIGH

Serve over hamburger buns with a side of cole slaw, potato salad and baked beans.
