Ingredients:
2 15oz cans black beans, drained and rinsed
2 15oz cans mexican corn, drained
1 1-lb can rotel tomatoes
3 medium boneless skinless chicken breast
1 medium onion, chopped
2 32oz boxes chicken broth (low sodium optional)
1 package TACO seasoning
Directions:
Add in all ingredients in crockpot except the chicken breast. Stir to mix ingredients well. Add the chicken breast in last.
Cook on high for 6-7 hours. 30 minutes before serving, remove the chicken breast and cut in small pieces or shred with a fork, put chicken back into crockpot, stir and let cook another 30 minutes or so. Serve with sour cream and baked tortilla strips
Garnish with mexican cheese
